Delicious Thick Pea Soup
With the winter on hands this is a winner, especially if served with thick slices of freshly baked bread and butter.
INGREDIENTS
900g Dry Peas
60g Soup Meat, preferably beef
90g Deboned Smoked Pork-Rib
60g Back Bacon cut into small cubes
36g Grated Carrots
60g Grated Potatoes
30g Onions, finely chopped
18g Fresh Table Celery, finely chopped
120g Beef extract
1 Bay Leaf
3g Black Pepper, freshly ground
3g Table Salt
Method:
1. Soak the Peas in water until soft, and then cook in boiling water until very tender
2. Dissolve Beef extract in one cup of boiling water
3. Simmer Onions and Celery together
4. Cut Pork Rib into small cubes and fry together with Soup Meat and Bacon
5. Cover meat with water and boil slowly until tender
6. Mix all ingredients together, add Bay Leaf on top and simmer until thick
7. Add Salt and Pepper to taste.
8. Serve in a soup bowl, garnish with a sprig of fresh Parsley with thick slices of freshly baked bread, and butter
9. Can be frozen very successfully
Serve: 6 nice large portions
